This Scottish style smoked salmon comes from the Atlantic Salmon (salmo salar). It is hand-cured and smoked in the traditional fashion, using oak chips. This produces a firm texture and a rich, exquisite taste. We only use salmon produced in accordance with the highest environmental and aquaculture standards. This cut comes from one of the most tender and flavorful parts of the fillet and is cut from the upper center of the Atlantic Salmon.
